Chicken Yakitori

Ingredients:

  • 1/2 cup soy sauce
  • 1/2 cup mirin
  • 1/4 cup sake
  • 1/4 cup sugar
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 lb chicken thigh, cut into 1-inch pieces
  • Green onions (optional, for garnish)
  • Skewers (if using bamboo, soak in water for 30 minutes beforehand)
Instructions:

  1. In a saucepan, combine soy sauce, mirin, sake, sugar, garlic, and ginger over medium heat. Bring to a simmer, stirring until the sugar dissolves. Simmer for about 5 minutes to thicken slightly, then remove from heat and let cool.
  2. Reserve about 1/4 of the sauce for serving. Marinate the chicken pieces in the remaining sauce for at least 1 hour, or up to overnight in the refrigerator.
  3. Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers.
  4. Grill the chicken skewers for 3-4 minutes on each side, or until the chicken is cooked through and slightly charred. Brush occasionally with the marinade during cooking.
  5. Warm the reserved sauce in a small pan and serve it with the grilled chicken skewers. Garnish with green onions if desired.
