Pulled Pork Sandwiches
Ingredients:
- 2 kg (4.4 lbs) pork shoulder
- 1 tablespoon salt
- 1 tablespoon ground black pepper
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 cup barbecue sauce
- 1/2 cup apple cider vinegar
- 1/2 cup chicken broth
- 1/4 cup light brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon chili powder
- 4 cloves garlic, minced
- 1 onion, chopped
- Buns, for serving
- Coleslaw, for serving (optional)
Instructions:
- Mix together the salt, ground black pepper, smoked paprika, and garlic powder. Rub the mixture all over the pork shoulder, ensuring it is well-coated.
- Place the seasoned pork in a slow cooker.
- In a bowl, combine barbecue sauce, apple cider vinegar, chicken broth, light brown sugar, Worcestershire sauce, chili powder, minced garlic, and chopped onion. Pour this mixture over the pork in the slow cooker.
- Cover and cook on low for 8 hours, or until the pork is tender and shreds easily with a fork.
- Remove the pork from the slow cooker and shred using two forks. Return the shredded pork to the slow cooker and stir it into the sauce.
- Serve the pulled pork on buns, topped with coleslaw if desired.
