Ingredients
- 1.5 pounds of flank steak
- 2 tablespoons of olive oil
- 2 teaspoons of coarse kosher salt
- 1 teaspoon of freshly ground black pepper
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1 teaspoon of dried oregano
- 1/2 cup of fresh parsley, finely chopped
- 2 tablespoons of red wine vinegar
- 1/3 cup of olive oil
- Juice of 1 lime
Instructions
- Preheat your grill to high heat.
- In a small bowl, mix together 2 tablespoons of olive oil, salt, pepper, garlic, paprika, and oregano.
- Rub the mixture onto both sides of the steak, making sure it is well coated.
- Place the steak on the grill and cook for about 5 minutes on each side for medium-rare, or longer depending on your desired level of doneness.
- Remove the steak from the grill and let it rest for 5 minutes.
- While the steak is resting, prepare the chimichurri sauce by mixing together parsley, red wine vinegar, 1/3 cup of olive oil, and lime juice in a bowl.
- Slice the steak against the grain into thin strips.
- Serve immediately with the chimichurri sauce drizzled over the top.
