Beef Wellington Recipe

Ingredients

  • 1 kg beef fillet
  • Salt and freshly ground black pepper
  • Olive oil, for frying
  • 500g mixture of wild mushrooms, cleaned
  • 1 thyme sprig, leaves only
  • 500g puff pastry
  • Flour, to dust
  • 2 egg yolks, beaten
  • 8 slices of Parma ham
  • 2 tbsp Dijon mustard
  • 1 egg yolk, beaten with 1 tbsp water and a pinch of salt (egg wash)

Instructions

  1. Season the beef fillet with salt and pepper and sear in a hot pan with a little olive oil for 30 seconds only on each side. Let cool and then brush all over with the mustard.
  2. Chop the mushrooms as finely as possible so they resemble coarse breadcrumbs. You can do this by hand or in a food processor. Fry the mushrooms in a hot pan with a little olive oil, thyme leaves, and seasoning. When the mushrooms are cooked, let the mixture cool down.
  3. On a large piece of cling film, lay out the Parma ham slices slightly overlapping. Spread the mushrooms over the ham, then place the beef fillet in the middle. Roll the Parma ham and mushrooms over the beef to encase it and use the cling film to roll it into a tight barrel shape. Chill in the fridge for 15 minutes.
  4. Preheat the oven to 200°C (approximately 400°F).
  5. Roll out the puff pastry on a floured surface to a rectangle, large enough to wrap the beef. Unwrap the beef from the cling film and place in the middle of the pastry. Brush the surrounding pastry with the egg wash. Fold the pastry over the beef to encase it completely and press well to seal. Trim any excess pastry.
  6. Place the beef Wellington seam side down on a baking tray. Brush the top with more egg wash and make a couple of slits on the top of the pastry with a knife. This will allow steam to escape during cooking.
  7. Bake for 20 minutes, then lower the oven to 180°C (approximately 350°F) and cook for another 15 minutes. Let rest for at least 10 minutes before slicing.
