Chicken Souvlaki
Ingredients
- 2 pounds chicken breast, cut into bite-sized pieces
- 3 tablespoons olive oil
- 1 tablespoon dried oregano
- 2 cloves garlic, minced
- 1 lemon, juiced
- 2 teaspoons red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Skewers
- For serving: Tzatziki sauce, sliced tomatoes, sliced onions, pita bread
Instructions
- In a large bowl, combine olive oil, oregano, garlic, lemon juice, red wine vinegar, salt, and black pepper.
- Add the chicken pieces to the marinade, ensuring each piece is well-coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
- If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
- Preheat grill to medium-high heat. Thread the marinated chicken pieces onto skewers.
- Grill chicken skewers, turning occasionally, until the chicken is golden brown and cooked through, about 10-12 minutes.
- Remove the chicken skewers from the grill and let them rest for a few minutes.
- Serve the chicken souvlaki on skewers or off, with tzatziki sauce, sliced tomatoes, sliced onions, and pita bread on the side.
