Pork Vindaloo
Ingredients:
- 1 kg pork (cut into cubes)
- 5 cloves garlic (minced)
- 1 inch ginger (minced)
- 2 tablespoons vindaloo paste
- 1 tablespoon vinegar
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon hot chili powder (adjust to taste)
- 2 tablespoons vegetable oil
- 2 large onions (finely sliced)
- 2 large tomatoes (pureed)
- 1 cup water
- Salt to taste
Cooking Instructions:
- Mix the pork cubes with the garlic, ginger, vindaloo paste, vinegar, turmeric, cumin, coriander, chili powder, and salt. Marinate for at least 2 hours, or overnight for best results.
- Heat the oil in a large pan or Dutch oven over medium heat. Add the onions and cook until they are golden brown.
- Add the marinated pork to the pan, and cook until all sides of the pork are well browned.
- Add the tomato puree and water. Stir well to combine everything.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1 to 1.5 hours, or until the pork is tender.
- Adjust the seasonings to taste. Serve hot with rice or naan bread.
